Ingredients
- For the Payasam
1 litre full-fat milk
1 cup roasted vermicelli (semiya)
2 tsp premium vanilla powder
½ cup sugar
2 tbsp ghee
2 tbsp chopped cashews
2 tbsp raisins
2 tbsp chopped almonds
1 tbsp chopped pistachios
Pinch of salt

Saffron strands
Dried rose petals
Fresh vanilla powder sprinkle
How to Cook
- Heat the ghee in a heavy-bottomed pan and roast the cashews, almonds, pistachios, and raisins until golden. Remove and set aside.
- In the same pan, lightly roast the vermicelli for 2–3 minutes if it isn’t already roasted.
- Pour in the milk and bring it to a gentle boil over medium heat.
- Add the roasted vermicelli and cook for 10–12 minutes until soft.
- Stir in the sugar and continue cooking until fully dissolved.
- Add the premium vanilla powder and a pinch of salt. Mix well to evenly distribute the vanilla flavor.
- Add the roasted nuts and raisins, reserving a few for garnish.
- Simmer for another 5 minutes until the payasam becomes creamy.
- Remove from heat and allow it to rest for a few minutes before serving.
- Garnish with chopped pistachios, saffron strands, and a light sprinkle of vanilla powder. Serve warm or chilled.
