Ingredients
- For the Kheer
1 litre full-fat milk
¼ cup basmati rice, washed and soaked for 20 minutes
1 premium Madagascar vanilla bean, split and seeds scraped
½ cup granulated sugar
2 tbsp chopped almonds
2 tbsp chopped cashews
1 tbsp chopped pistachios
1 tbsp raisins
1 tsp ghee
Pinch of salt

Edible dried rose petals
Vanilla bean seeds
How to Cook
- Wash and soak the basmati rice for 20 minutes. Drain and set aside.
- Heat the ghee in a heavy-bottomed saucepan and lightly roast the cashews, almonds, pistachios, and raisins until fragrant. Remove and keep aside.
- In the same saucepan, bring the milk to a gentle boil over medium heat.
- Add the soaked rice, vanilla bean seeds, and the vanilla pod to the milk.
- Cook over low heat for 35–40 minutes, stirring frequently until the rice becomes soft and the milk thickens.
- Remove the vanilla pod and stir in the sugar until completely dissolved.
- Add the roasted nuts, raisins, and a pinch of salt. Mix well.
- Cook for another 5 minutes until the kheer reaches a creamy consistency.
- Serve warm or refrigerate for a chilled dessert.
- Garnish with chopped pistachios, saffron strands, rose petals, and a few vanilla bean seeds before serving.

- Stir regularly while cooking to prevent the milk from sticking to the pan.
- The kheer thickens further as it cools; add a little warm milk before serving if needed.
