Ingredients

  • For the Rice Pudding
  • ½ cup short-grain rice

  • 1 litre full-fat milk

  • 1 Premium Madagascar Vanilla Bean, split and seeds scraped

  • ½ cup granulated sugar

  • 2 tbsp raisins

  • 2 tbsp chopped almonds

  • 2 tbsp chopped pistachios

  • 1 tbsp unsalted butter

  • Pinch of salt

  • Optional Garnishes
  • Chopped pistachios

  • Saffron strands

  • Fresh vanilla bean seeds

  • Dried rose petals

  • Ground cinnamon

How to Cook

  • Rinse the rice thoroughly under cold water and soak it for about 15–20 minutes. Drain well.
  • Melt the butter in a heavy-bottomed saucepan and lightly sauté the drained rice for 1–2 minutes.
  • Add the milk, vanilla bean seeds, and the scraped vanilla pod. Bring the mixture to a gentle simmer over medium heat.
  • Reduce the heat to low and cook slowly for about 30–35 minutes, stirring regularly, until the rice is tender and the milk has thickened into a creamy pudding.
  • Stir in the sugar and a pinch of salt, then continue cooking for another 3–5 minutes until the sugar dissolves completely.
  • Remove the vanilla pod and fold in the raisins, almonds, and pistachios.
  • Serve warm or refrigerate for a few hours and enjoy chilled. Garnish with pistachios, saffron, or a few vanilla bean seeds before serving.
