Vanilla Bean Kheer is a delightful fusion of traditional Indian rice pudding and the rich, aromatic flavor of real vanilla bean seeds. Made with creamy milk, fragrant basmati rice, and premium Madagascar vanilla beans, this luxurious dessert offers a unique twist on a beloved classic. Perfect for festivals, family celebrations, or special occasions, this homemade kheer is rich, comforting, and irresistibly delicious.

Ingredients

  • For the Kheer
  • 1 litre full-fat milk

  • ¼ cup basmati rice, washed and soaked for 20 minutes

  • 1 premium Madagascar vanilla bean, split and seeds scraped

  • ½ cup granulated sugar

  • 2 tbsp chopped almonds

  • 2 tbsp chopped cashews

  • 1 tbsp chopped pistachios

  • 1 tbsp raisins

  • 1 tsp ghee

  • Pinch of salt

  • Optional Garnishes
  • Saffron strands

  • Chopped pistachios

  • Edible dried rose petals

  • Vanilla bean seeds

How to Cook

  • Wash and soak the basmati rice for 20 minutes. Drain and set aside.
  • Heat the ghee in a heavy-bottomed saucepan and lightly roast the cashews, almonds, pistachios, and raisins until fragrant. Remove and keep aside.
  • In the same saucepan, bring the milk to a gentle boil over medium heat.
  • Add the soaked rice, vanilla bean seeds, and the vanilla pod to the milk.
  • Cook over low heat for 35–40 minutes, stirring frequently until the rice becomes soft and the milk thickens.
  • Remove the vanilla pod and stir in the sugar until completely dissolved.
  • Add the roasted nuts, raisins, and a pinch of salt. Mix well.
  • Cook for another 5 minutes until the kheer reaches a creamy consistency.
  • Serve warm or refrigerate for a chilled dessert.
  • Garnish with chopped pistachios, saffron strands, rose petals, and a few vanilla bean seeds before serving.

  • Use Premium Madagascar Vanilla Beans for an authentic and rich vanilla aroma.
  • Stir regularly while cooking to prevent the milk from sticking to the pan.
  • The kheer thickens further as it cools; add a little warm milk before serving if needed.
  • Serve warm during winter or chilled during summer.
